Sara Briman, winner of the American Academy of Hospitality Science’s Five-Star Diamond International Challah award, has toured the world as of late, teaching the art of making authentic challah.
At her many “Mega Challah Bakes” around the world she shares her secret techniques with eager participants. She is known for including some Jewish knowledge along with her methods: “The piece broken off is discarded respectfully,” she has said. “It reminds me that there are blessings in everything I do that come from God and are not owned by man.”
Twenty-seven years ago, Briman was already a personal chef and had clients requesting challah for the holidays. Determined to master it, Briman, from Mexico City, began baking challah monthly and finally baking a good one, she turned hard core: “This year, I baked 380 challahs for the holidays,” she said.
